Coconut Caramel

Coconut Milk Candy

Like an afternoon on a beach vacation. The salty cream and nut bits mixed with coconut aroma make you want to take off your shoes, bask in the sun, and daydream. It doesn't aim to impress but rather to slow you down.

Flavor
Coconut Milk Candy offers a refreshing and layered tropical flavor experience, perfectly blending sweet, salty, and crunchy textures. The first taste is the smooth and subtly salty cream layer, with the rich and creamy aroma of light cream enhanced by the addition of salt, creating an unexpected and delightful flavor boost. The salt does not overpower but rather complements the cream, forming a charming sweet-salty contrast similar to salted caramel or milk tea. The cream melts in the mouth, light and smooth like a cloud. The nut bits provide a crunchy texture and the rich aroma of roasted nuts, adding extra layers and interest. As the cream gradually mixes with the coconut-flavored rum below, a magical chemical reaction occurs in the mouth. The coconut water brings a refreshing and naturally sweet flavor, evoking the true taste of young coconut and a subtle electrolyte saltiness, refreshing and quenching like drinking fresh coconut on a tropical beach. The rum's sugarcane sweetness and subtle tropical fruit notes emerge in the middle, with a gentle alcohol presence that is well-diluted by the coconut water, maintaining a moderate alcohol level suitable for slow sipping. The combination of rum and coconut is a classic Caribbean flavor, evoking a warm tropical vacation atmosphere. When the salty cream mixes with the sweet coconut-flavored rum, it creates a complex flavor reminiscent of coconut milk candy—rich cream, refreshing coconut, the lift from salt, the crunch of nuts, and the warmth of rum, all perfectly balanced. The slow melting of the large ice cubes keeps the flavor intense and lasting, ensuring consistent deliciousness even in hot environments. The overall taste is refreshing, easy to drink, and layered, with prominent notes of coconut, cream, salty caramel, and nuts, like a liquid coconut milk candy dessert. The finish is long and refreshing, with tropical coconut notes, a soft creaminess, and a subtle sweet-salty aftertaste. This is the perfect summer refreshment, ideal for slow enjoyment, bringing the relaxation and pleasure of a beach vacation with every sip.

Method

  1. 01

Prepare large ice cubes in advance: Use an ice mold to freeze 3 large ice cubes (each about 5x5cm) or use a spherical ice mold to make 3 ice balls. Large ice cubes melt slowly, maintaining the flavor intensity of the drink without over-diluting it. Place them in the freezer at least 4 hours in advance until completely solid.

  2. 02

Prepare a clear Collins glass (capacity about 350-400ml), rinse the glass with cold water and dry it to ensure it is clean and transparent, showcasing the layered beauty of the drink.

  3. 03

Carefully place the 3 large ice cubes into the Collins glass, allowing them to naturally stack. The ice cubes should occupy about half to 2/3 of the glass height, leaving space for the rum and coconut water.

  4. 04

Measure 45ml of rum using a jigger (white rum is recommended for a refreshing taste, or gold rum for a richer flavor), and slowly pour it along the side of the glass, allowing the rum to naturally seep between the ice cubes.

  5. 05

Slowly pour the chilled coconut water (pre-chilled) into the glass until it is about 90% full (about 1-1.5cm below the rim), reserving space for the cream layer. Gently rotate the glass as you pour to allow the coconut water to mix with the rum, forming a uniform coconut-flavored base.

  6. 06

[Prepare the salty cream] In a mixing glass (or small bowl), pour 40ml of light cream (animal-based cream with at least 35% fat content, do not use plant-based cream). Ensure the cream is chilled (about 4-8°C) for optimal whipping results.

  7. 07

Add 1 small spoon of salt (about 3-5g, fine sea salt or rock salt is recommended for a finer salty taste) to the cream and stir quickly with a spoon to dissolve the salt.

  8. 08

Use an electric frother (a handheld milk frother or French press can also be used) to whip the salty cream for about 30-45 seconds. Observe the cream's state: initially, large bubbles will form, then continue whipping until a fine foam is created, reaching the 'soft peak' stage—where the cream volume increases by about 1.5-2 times, the texture is fluffy and still slightly runny, and it forms a soft peak when scooped with a spoon. Do not over-whip to the 'stiff peak' stage, as this will make the cream too hard and the texture rough.

  9. 09

⑨ Carefully scoop the whipped salty cream with a large spoon and gently pour it over the surface of the coconut rum mixture. Start from the center and spread outward, allowing the cream to naturally float and cover the entire surface, forming a 1.5-2cm thick layer of white cream. Handle gently to maintain the light and layered visual effect.

  10. 10

⑩ Prepare the nut bits: Use almond bits, cashew bits, macadamia bits, or a mix of nuts (roasting them in advance enhances the aroma). Take a small amount of nut bits (about 5-8g) and sprinkle them evenly over the cream layer as a final decoration and texture contrast, adding a golden hue to the white cream and enhancing the visual and crunchy texture.

  11. 11

⑪ Optional garnish: Insert a wide straw or eco-friendly paper straw to allow guests to mix the cream and drink. Alternatively, provide a long bar spoon so guests can taste the salty cream first, then stir and enjoy the full flavor.

  12. 12

⑫ It is recommended to sip gently with your lips, tasting the smooth and refreshing coconut-flavored drink along with the creamy and salty cream, enjoying the delightful contrast of sweet and salty flavors. Alternatively, taste the pure cream with a bar spoon first, then drink the liquid, and finally stir to enjoy the fully blended flavor.
