The Horse's Neck originated at the end of the 19th century, initially as a non-alcoholic drink. It is made by mixing cognac (or brandy) with ginger ale, with the optional addition of Angostura bitters. The name comes from the long spiral of lemon peel that hangs over the rim of the glass, resembling a horse's neck. Later, it evolved into a version with spirits and became particularly popular in the U.S. Navy.
