Chill the cocktail glass (preferably an Old Fashioned glass or a shallow Champagne coupe) in the refrigerator for at least 30 minutes to ensure it is thoroughly chilled.

In a shaker, add 45ml Gosling's Black Rum, 15ml Caramel Chestnut Syrup, and 25ml Fresh Lemon Juice.

Add ice to the shaker until it is about 2/3 full, and securely close the shaker.

Shake vigorously for 15-20 seconds until the shaker is frosted and feels cold, ensuring the mixture is well combined and chilled.

Remove the chilled glass from the refrigerator and strain the cocktail into the glass, filling it about 2/3 full to leave room for the foam.

To make the Chestnut Foam: In a professional whipping siphon (or tall container), combine 30ml Chestnut Syrup, 30ml Purified Water, 5ml Salt Water, and 2g Soy Lecithin Powder.

Use an electric frother (or handheld whisk) to mix the liquid at high speed for about 30-45 seconds. The soy lecithin will cause the liquid to emulsify, creating a large amount of fine, stable foam. The foam should be smooth, stable, and resistant to breaking.

Carefully scoop the finest layer of chestnut foam with a large spoon and gently layer it on top of the cocktail, building it from the center outward to form a 'ghostly hill' shape, about 3-5 cm high.
