Method

    Mix 3g of matcha powder with 20ml of warm jasmine tea, stir thoroughly until completely dissolved to form the matcha liquid, and set aside.

    In a shaker, add 40ml of white rum, the matcha liquid, 20ml of lemon juice, 15ml of simple syrup, and 120ml of milk.

    Add ice to the shaker until it is 2/3 full, and cover with the shaker lid.

    Shake vigorously for about 15-20 seconds until the outside of the shaker is cold and frosted. At this point, the milk will begin to curdle slightly with the lemon juice, starting the milk wash process.

    Prepare a highball glass (pre-chilled), and carefully filter the shaken mixture through a pour-over filter (or a double-layer fine mesh strainer) into the glass, removing matcha particles, milk curds, and ice shards, resulting in a clear emerald green liquid.

    Place the filtered mixture in the refrigerator and let it rest for 30 minutes to allow the flavors to fully meld and the milk wash process to continue, making the drink smoother and more velvety.
